Recipe
Pork and shrimp wontons in ginger broth
- 40 square wonton wrappers
Filling
- 250 g ground pork
- 150 g peeled raw shrimp, chopped
- 2 scallions, minced
- 2 tsp grated ginger
- 1 tbsp soy sauce
- 1 tbsp Shaoxing wine
- 1 tsp sesame oil
- 1 tsp cornstarch
- 1/4 tsp white pepper
Broth
- 1.5 L chicken stock
- 3 ginger slices
- 1 tbsp soy sauce
- 250 g bok choy, quartered
- 1
Filling: 250 g ground pork; 150 g peeled raw shrimp, chopped; 2 scallions, minced; plus the remaining ingredients listed for this component. Mix all filling ingredients until they hold together; refrigerate while preparing the broth. Pat shrimp dry before chopping. Stir the filling until sticky and refrigerate covered.

Broth: 1.5 L chicken stock; 3 ginger slices; 1 tbsp soy sauce; plus the remaining ingredients listed for this component. Simmer stock with sliced ginger and soy for 10 minutes. Add bok choy and cook 3 minutes. Use a quiet simmer; bok choy stems should be just tender, not falling apart.

Put 2 tsp filling on each wrapper. Wet two adjacent edges, fold diagonally and press out air. Moisten one side corner and join the two side corners. Keep unused wrappers covered. Use only a thin film of water on the rim, press air out and seal the whole edge before joining corners.

Boil wontons separately in water for 5-7 minutes, until pork reaches 71°C/160°F and shrimp is opaque. Transfer to bowls and ladle over hot broth. Cook in a roomy pot and time from the return to a gentle boil. Check a tender wrapper and the center temperature before ladling over hot broth.
Note
Thin square wonton skins differ from thicker jiaozi wrappers. Keep unused skins covered and avoid crowding the pot.
